DETECTION BY EPR METHOD OF RADIATION TREATMENT IN DRIED FRUITS CONTAINING CRYSTALLINE SUGAR

The results of EPR (electron paramagnetic resonance) measurements are presented on the detection ability and stability of radiation induced sugar-born radicals in the samples of dried (dehydrated) fruits available in the market and related to doses of 0.5, 1 and 3 kGy, respectively. The experiments have been conducted during 12 months of storage. Measurements were done with an EPR-10 MINI spectrometer in X band (frequency of microwaves 9.5 GHz), St. Petersburg Instruments Ltd.
The aim of the work was to prove the reliability of applicability of the method in routine control of irradiated food.
