Results of the determination of the content of radiation induced hydrocarbons in meat samples (chicken, pork and beef) as well as the proportion between the concentration of individual hydrocarbons in relation to the content of fatty acids in a given product are presented.
The measurements have been done with the use of a Perkin Elmer model 8700 gas chromatograph equipped with a FID detector.
The present study is a preliminary work on the implementation of a routine method for the detection of irradiation in foods that contain fats.
